Asinan pepaya khas Manado yang segar dan sangat mudah dibuat, yup, itulah gohu. Rasanya memang segar, sedikit asin, manis, sedikit asam dan pedas...mantap sekali disantap dingin ketika cuaca panas, duh nikmatnya.

Sudah lama sekali saya tidak makan gohu ini, terakhir makan ketika masih SD, duh lama sekali kan. Itu juga sering makan karena teman kecil saya yang orang Manado, sudah pandai sekali membuat gohu dan ketika ke rumahnya dia selalu menyajikan gohu.
Nah di rumah, ibu saya tidak pernah membuat gohu ini, secara asinan pepaya ini tidak setenar masakan Manado lainnya, mungkin ya, kalah pamor dengan panada, sup brenebon dan sambal dabu-dabu.
Dulu waktu pertama kali ke Bandung dengar ada yang bilang gehu, gehu, eh malah mikirnya apa itu yang asinan pepaya ya, masak ada juga di Bandung, ealah ternyata gehu itu adalah tahu isi, ha ha ha...secara mirip namanya.
Nah baru sekarang saya berniat membuat gohu sendiri, ide ini muncul karena beberapa waktu lalu beli buku resep aneka makanan segar, nah baca resepnya, ealah ada juga yang namanya gohu, duh jadi teringat masa lalu, menikmati gohu yang segar dan gratis pulak, ha ha ha...
Minggu lalu sudah ingin buat gohu, apadaya ada insiden kulkas rusak, jadi batal, nah sekarang saatnya membuat gohu...tada...berikut resepnya ya, inpirasi dari buku resep aneka makanan segar dengan modifikasi ala saya.
Gohu Khas Manado
Bahan :
- 1/2 buah pepaya mengkal ukuran kecil, potong kotak memanjang
- 500 ml air
- 4 buah jeruk limau/lemon cui
- 3 sendok makan gula pasir
- 1/2 sendok teh garam
- 1 cm jahe, iris
Bumbu halus :
- 5 buah cabai merah keriting
- 3 butir cabai rawit
Cara membuat :
- Campur air, gula, garam dan cabai halus, masukkan jahe iris, masak dengan api sedang hingga mendidih, cicipi rasanya, jika dirasa kurang manis bisa tambahkan gula
- Sesaat sebelum diangkat beri perasan jeruk limau, aduk rata
- Tuangkan ke dalam mangkuk berisi irisan pepaya mengkal, aduk rata
- Diamkan hingga dingin, masukkan ke dalam kulkas
- Nikmati kala dingin

Indonesia has many regions with a lot of signature dishes. One of the regions that well known for delicious food is Manado. Manado is the capital city of North Sulawesi. This time, I posted the recipe that is called gohu, a papaya pickle.
I have known gohu since I was a little girl. I have a friend whose parents are from Manado. She could make her own gohu and she asked me to try her gohu. Wow.. a little bit surprised when I tried it, but I did like it.
When I read a fresh dish cookbook, I found gohu recipe. And suddenly I thought about her and remembered her gohu, but I couldn't ask her made it for me, she lives in Jakarta. Oh no, you have to make it by yourself, I said it to myself. So here is the recipe..special for myself...ha ha ha..
Easy, as long as you can find the main ingredient, nearly ripe Papaya or we call it pepaya mengkal. When you use ripe papaya, it will be too soft and gooey.
Gohu, nearly ripe Papaya Pickle (papaya pickle from Manado, North Sulawesi)
Ingredients :
- 1/2 small nearly ripe papaya, cut into matchsticks
- 500 ml water
- 4 calamansi or golden lime (kaffir lime, lime or lemon can be used too)
- 3 tablespoons sugar
- 1/2 teaspoon salt
- 1 cm ginger, thinly sliced
Grounded spices: adjust to taste
- 5 red chilies
- 3 cayenne pepper
Directions :
- Mix water, sugar, salt, and chili, add ginger slices in a saucepan, cook over medium heat, bring it to boil, taste, add more sugar if needed
- Before removing from stove, add in lime juice, mix well
- Pour into a bowl of sliced nearly ripe papaya, stir, let stand until cool then you can put in the refrigerator
- Enjoy when it's cool, add ice cubes if necessary
